Soaked Cashews – A Vegan Kitchen Staple

When I refer to kitchen staples – this is one of them. I always have raw cashews in my pantry. I use soaked raw cashews for the base of many recipes including dressings and desserts.

How do I soak cashews?

I place about 2 cups of cashews in a bowl and cover with water. I soak them at least 12 hours. This starts the sprouting process (won’t go into that right now, but just know it makes them “bioavailable”).

Every few hours I strain the cashews through a colander and rinse with cool water. This takes less then a minute and then put the cashews in water again to continue soaking.

Once that’s done, I take the soaked cashews and put in my Vitamix. If you don’t have one, consider buying one! The best upgrade ever. I get this amazing creamy dressing. It is dairy, sugar and gluten free. This is a great topping to any salad or steamed vegetable.

This simple recipe takes minutes to make. I put in a mason jar and it lasts at least a week.
