Raw Caramel Strawberry Cheesecake

2/3 Cup raw Almonds
1/4 Cup Dates
1/8 Cup dried organic Coconut
3 Tbsp finely chopped, strawberries
1/8 – 1/4 tsp cinnamon
1/2 tsp Vanilla (Alcohol-free)

2 Cups strawberries
3/4 Cup raw Cashews
3 Tbsp Maple Syrup
1 tsp Lemon Juice
1 tsp Vanilla Extract
5 Tbsp Coconut Oil
Dash of Sea Salt

Caramel Sauce
8 Dates, soaked
1 Tbsp Raw Coconut Butter
1/3 Cup + 1 Tbsp Maple Syrup
1 1/2 tsp Vanilla Extract
2-4 Tbsp Date soak water
4 cups diced strawberries

1) In a food processor, grind almonds until it has the consistency of “flour.”Add remaining ingredients and pulse until a sticky texture is obtained.
2) In a spring form cake pan, sprinkle some dried coconut then press your crust evenly on bottom.
3) For filling – In Vitamix, combine all ingredients until smooth and creamy. Add a dash of water if needed.
4) Pour on top of your crust. Decorate with thinly sliced strawberries, chopped walnuts, and cinnamon.
5) Freeze for 3-4 hours. When you are ready to serve, make the caramel sauce by blending all ingredients in a high-speed blender until smooth.
6) After you dice the strawberries, mix a little of caramel sauce with the fruit and drizzle on top of your cheesecake slices.
