Mindful Nutrition - Vegan Carrot Soup

Made a gorgeous Vegan Carrot Soup, blended soaked cashews, added a touch of salt and a touch of maple syrup and made a delicious cashew cream.  Put a dollop of that in bowl of soup.  Holy moly was that good and sooooo easy!!!!

Ingredients
7 unpeeled washed and scrubbed carrots
3 onions
4 stalks of celery
Coconut oil
Salt
1 cup soaked cashews
1/2 tsp maple syrup

Soak cashews in water overnite, drain and set aside
Cut carrots into huge chunks and cover with water in a pot
Lightly simmer until carrots are soft
Sauté onions and celery in pan with coconut oil until browned
Place carrots, onions and celery in vitamix with salt
Blend until creamy

Cashew Cream
Place cashews, pinch of salt and maple syrup in blender
Blend until smooth

Place carrot soup in a bowl and add a dollop of cashew cream in middle.  Delicious and good for you!!
