Mindful Nutrition: Vegan Curry Lentil Soup Recipe


Check out what my partner at Balanced Bodies, Beth House Graham cooked up today.  So easy to do! Delicious and really satisfying.

2 c lentils
4 c veg broth. More as needed
1 onion finely chopped
4 celery stalks finely chopped
2 or 3 large carrots finely chopped
2 cloves garlic minced
1/4 c chopped cilantro
1 tbs curry powder
1tsp cumin
2 tbs lemon juice…or MORE!
Spinach
Kale

Saute Onion, Celery, Carrots, Garlic in Coconut Oil. Then add broth, rinsed lentils, spices. Simmer 20 -30 minutes until lentils are soft. Finish by adding greens, cilantro and lemon juice.
